Recipe of the Week TEXAS CAVIAR A great way to use and eat
fresh tomatoes and bell peppers. 2 14-ounce cans black-eyed peas or black beans, rinsed and drained 14-ounce can hominy, drained and chopped 3 medium fresh tomatoes, finely chopped 16 (2 bunches) green onions, finely chopped ¼ cup fresh cilantro, chopped 4 cloves garlic, minced 1 orange bell pepper, finely chopped 1 yellow bell pepper, finely chopped 2 small cans diced green chilies, drained OR ½ - 1 jalapeno pepper, finely chopped Juice from 1 lime Gently mix all ingredients together. Serve with baked tortilla chips. Also delicious on fish or chicken. Store in refrigerator.
