1 T. olive oil
2 cloves garlic, minced
1/2 c. chopped onion
1/2 c. chopped green pepper
1 c. sliced mushrooms
1 can (19 oz.) black beans. rinsed and drained
1 can (8 oz.) tomato sauce
1 can (15 oz.) diced tomatoes, undrained
1/2 c. bulghur (cracked wheat), uncooked
1/3 c. water
1 t. cumin
1 T. chili powder
salt and pepper to taste

Heat oil in large pot over medium heat. Add garlic, onion, green pepper, and mushrooms. Cook about 10 minutes, or until vegetables are tender, stirring occasionally. Add remaining ingredients. Reduce heat to low, cover, and simmer 15-20 minutes until bulghur thickens.
